Ingredients

  • 10 roma tomatoes
  • 1 medium onion
  • 1 bunch cilantro
  • 2 limes fresh squeezed lime juice
  • 1 tablespoon salt to taste
  • ½ tablespoon pepper to taste
  • 2 tablespoon cumin
  • 3 tablespoon extra virgin olive oil Optional for richness
  • 1 jalapeno Optional

Instructions

  • Pulse roma tomatoes in food processor to desired consistency (or hand chop, optional). Transfer to mixing bowl.
  • Pulse onions in food processor to desired consistency (or hand chop, optional). Transfer to mixing bowl.
  • Pulse cilantro in food processor to desired consistency (or hand chop, optional). Transfer to mixing bowl.
  • Optional - Pulse jalapeno in food processor to desired consistency (or hand chop, optional). Transfer to mixing bowl.
  • Add lime juice, salt, pepper, cumin, extra virgin olive oil (optional) and jalapeno. Mix well.
  • Add additional salt, pepper or cumin depending on your taste preferences.
