Pumpkin Seed Butter

This rich and creamy pumpkin seed butter is easy and delicious. Spread it on your bread or muffin, top your oatmeal, mix it in your smoothies or bake it in cookies or homemade granola bars!

Ingredients

  • 2 cup roasted pumpkin seeds
  • 2-3 tablespoon neutral oil (ex: canola or vegetable)

Instructions

  • Combine roasted pumpkin seeds and oil in food processor or blender.
  • Blend in intervals so machine does not overheat and seeds don’t get too hot (check every 1-3 minutes depending on your blender).
  • This process will take anywhere from 5 to 20 minutes depending on the power of your machine.
  • You will first notice the seeds are chopping up. They will then become more crumbly. They will then turn into a clumpy mixture (wetter). They will then become smooth and creamy. The longer your blend, the smoother the consistency will be.
  • Transfer to air-tight container or glass jar. Store nut butter in refrigerator.
