Combine oregano, paprika, cumin, black pepper, ground coriander, thyme, basil, onion powder, garlic powder, cayenne pepper and nutmeg.
Stir until thoroughly combines.
Store tempero baiano Brazilian spice in an airtight glass jar or container.

Variations: Tempero baiano is a spice blend with different varieties. Other spices you may include or substitute include marjoram, curry, saffron, turmeric, white pepper, bay leaves and red pepper flakes.
Substitutions: While the ratio may not be exact, if you do not have all of the individual spices, you can substitute Italian seasoning for oregano, thyme, basil and garlic powder. Some baiano recipes have marjoram and rosemary which is typical in an Italian seasoning blend.
