Rainbow Salad
- 1-2 lg Carrots Thicker is better for spiral slicing
- 1 Persian Cucumber
- 1 Red Pepper
- 1 Orange Pepper
- 1 Yellow Pepper
- ¼ cup Purple Cabbage
Chinese Five-Spice Salad Dressing
- ¼ cup Seasoned Rice Wine Vinegar
- ⅛ cup Extra
Virgin Olive Oil
- ½ teaspoon Asian
Five Spice Powder
- ¼ Salt Season to your liking
- ½ Pepper Season to your liking
Rainbow Salad
Spiral slice cucumber and carrot. If you do not have a spiral slicer, you can hand chop. You may also consider grating the carrots (course grate).
Hand slice peppers in thin strips. Slice purple cabbage in thin strips (or use a mandolin).
Hand mix everything together or arrange in colorful sections for presentation if you
so choose.
