Equipment

  • Cakesicle sticks, Cakesicles tray or cake popsicles mold. Optional for gifting: cakesicles packaging (cakesicle box)

Ingredients

  • 1 box cake mix or equivalent 9 x 13 inch cake made from scratch
  • 2-3 tablespoons cake frosting
  • cups melting chocolate wafers (candy melts) or high quality chocolate chips

Instructions

Cake Filling for Halloween Cake Popsicles (Cakesickles)

  • Make cake of choice and allow to fully cool.
  • Optional: If there are hard crusty corners, you can remove those prior to crumbling cake (see next step).
  • In large bowl, crumble cake with your hands. Make sure there are no large lumps. You can use a stand mixer if you have one.
  • Add frosting and fully mix. Once fully combined, the cake should easily form into a ball. If it is not sticky enough, you can add more frosting (in 1 teaspoon increments). Set aside.

Coating Cake Popsicles (Cakesickes) with Chocolate and Filling

  • In a microwave safe bowl, place ½ cup candy melts or chocolate chips.
  • Microwave for approximately 30-60 seconds or until fully melted.
  • If you do not have a microwave, you can melt chocolate using a double boiler.
  • In cake popsicle mold, spoon about 1 tablespoon of melted chocolate. Using a spoon, spread the chocolate to evenly coat the entire inside of the cakesicle mold (bottom and sides).
  • Place in refrigerator or freezer until chocolate is fully hardened.
  • Roll cakesicle cake mixture into small oval balls (approximately the size of your cake popsicle mold).
  • Press cake mixture into cakesicle mold. Top should be just slightly lower than top of mold (leave a small space for chocolate coating on top).
  • Insert cakesicle sticks into cake popsicle mold.
  • Spoon approximately ½ teaspoon melted chocolate on top of each cakesicle. Spread evenly with a knife or spoon.
  • Clean any excess chocolate around the edges. If there is any remaining, you can also trim off after chocolate has hardened.
  • Place Halloween cake popsicles back refrigerator or freezer until chocolate is fully hardened.
  • Carefully remove Halloween cake popsicles from the mold. If there is excess chocolate around the edges, lay on a piece of parchment paper and trim with a small paring knife.

Decorating Halloween Cake Popsicles (Cakesicles)

  • You can use a combination of chocolate drizzle, edible sparkles or sprinkles to decorate your Halloween Cake Popsicles.

Chocolate Drizzle Decoration

  • In a microwave safe bowl, place ½ cup candy melts or chocolate chips.
  • Microwave for approximately 30-60 seconds or until fully melted.
  • You can use pre-colored candy melts or, if using white candy melts or white chocolate chips, you can add food gel or food coloring to achieve desired color.

Sprinkles and Edible Sparkles

  • Add sprinkles or edible sparkles as desired.

Notes

Cakesicle Filling Ideas/Cakesicle Flavors: You can use any flavor of cake mix such as birthday cakesicles, pink cakesicles, strawberry cake popsicles, white cakesicles, pastel cakesicles, red velvet cake popsicle, lemon cakesicles, vanilla cakesicles, chocolate cakesicles and carrot cake cakesicles. You can also make brownie cakesicles.
Candy Melts or Chocolate Chips: I recommend using candy melts for this recipe if possible. They tend to melt the most easily, especially for beginning bakers. Alternatively, I like Kroger (Fry's Food) Private Selection White Chocolate Chips. The main ingredient is cocoa butter so they are higher quality and melted really well in the microwave. You can also use the white chocolate chips to make any color with food coloring or food gel.
Halloween Cake Popsicle Ideas: You can decorate using popular Halloween colors like orange, green and purple. You can also do fun characters like pumpkins, ghosts, mummy, Frankenstein or witch theme.
Sprinkles and Edible Glitter: Sprinkles and edible glitter are a great beginner way to make Halloween cake popsicles. Be sure to buy food grade edible glitter.
