Easy Easter Cookies

These Easter Cookies are packed with white chocolate chips and M&M’s. Soft, decadent and delicious. Easy cookies recipe ready in less than 30 minutes. Your whole family with fall in love with these Easter M&M chocolate chip cookies!

Equipment

  • Baking sheet, cooling rack, hand beater

Ingredients

  • 8 tablespoons salted butter 
  • ½ cup white sugar 
  • ¼ cup light brown sugar (lightly packed)
  • 2 teaspoons vanilla extract or vanilla bean paste
  • 1 egg yolk
  • cups all purpose white flour* * See notes for measuring flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt (only if using unsalted butter)
  • ½ cup Easter M&M's
  • ¼ cup white or milk chocolate chips or chocolate chunks

Instructions

  •  Preheat the oven to 350°.
  • Melt butter (about 30 seconds in microwave).
  • Combine wet ingredients (butter, white sugar, brown sugar, vanilla and egg yolk.
  • Beat until thoroughly combined. Add dry ingredients (flour, baking soda and salt).
  • Mix with beater initially and then switch to mixing by hand.
  • Dough will form crumbles and you can press them into a full ball of dough.
  • Mix in white chocolate chips and Easter M&M's by hand.
  • Roll dough into smaller balls (9 large cookies or 12 small cookies).
  • Small cookies: cook 10-12 minutes at 350°.
  • Large cookies: cook 13-15 minutes at 350°.
  • Note: Do note over bake. They will look fluffy and barely golden. Once they cool, they will be soft and delicious!
  • Allow cookies to cool on baking tray for at least 20-30 minutes. This will allow for carryover cooking. Store in airtight container. They also freeze well.

Notes

Tip to Measure Flour: When you measure your flour, do not scoop it out directly as that can lead to using more flour than is needed. To correctly measure your flour, give the flour a stir with a fork or a whisk to loosen it. Spoon the flour into cup until it is heaping, then level with the flat side of a knife.
