10 roma tomatoes 1 medium onion 1 bunch cilantro 2 limes fresh squeezed lime juice 1 tablespoon salt to taste ½ tablespoon pepper to taste 2 tablespoon cumin 3 tablespoon extra virgin olive oil Optional for richness 1 jalapeno Optional
Pulse roma tomatoes in food processor to desired consistency (or hand chop, optional). Transfer to mixing bowl.
Pulse onions in food processor to desired consistency (or hand chop, optional). Transfer to mixing bowl.
Pulse cilantro in food processor to desired consistency (or hand chop, optional). Transfer to mixing bowl.
Optional - Pulse jalapeno in food processor to desired consistency (or hand chop, optional). Transfer to mixing bowl.
Add lime juice, salt, pepper, cumin, extra virgin olive oil (optional) and jalapeno. Mix well.
Add additional salt, pepper or cumin depending on your taste preferences.
