Blackstone Potatoes
These Blackstone potatoes are easy and delicious! Potatoes on Blackstone are a great breakfast option and also perfect for a crowd as a side dish at that summer barbeque, 4th of July, Game Day or backyard party!

1-2 pounds potatoes, cubed (½ inch) 1 small onion, diced 1 red or green pepper, diced (optional) 4 tablespoons oil (vegetable, canola, olive oil) use more oil as needed 1-2 teaspoons seasoning of choice 1 teaspoon kosher salt
Preheat Blackstone griddle flat top to medium-high heat.
In medium bowl, toss diced potatoes, onions and peppers with 2 tablespoons oil and seasoning. Mix thoroughly.
Heat Blackstone griddle to medium-high heat. Generously oil Blackstone griddle. Use oil squeeze bottle or Blackstone spatula to spread.
Place potatoes on Blackstone and spread them out in one even layer.
Cook for approximately 15-20 minutes (stir every few minutes) or until potatoes are soft with a crispy exterior.
Remove Blackstone potatoes from griddle and enjoy!
