These oat flour pancakes are super soft, fluffy dairy-free, gluten free and vegan! Get your morning started off right with the perfect delicious and healthy breakfast.
¾cupunsweetened almond milk (can add additional almond milk if batter is too thick or continues to thicken as you are cooking)
2flax eggs
2tablespoonOil or vegan butter in pancake batter (optional). If you omit this ingredient you can add slightly more almond milk.
2tablespoonOil or vegan butter to cook pancakes in pan.
Optional Toppings
½cupraspberries, strawberries, blackberries or blueberries
¼teaspooncinnamon
½cupwhipped cream or vegan whipped cream
Instructions
Oat Flour Pancakes
In separate bowls, mix wet ingredients and mix dry ingredients. Combine wet and dry ingredients and thoroughly mix.
Let batter sit for about 5 minutes to allow oats to absorb moisture. Don't skip this step or batter will be too runny.
Heat your pan, griddle or skillet to medium high heat.
Pour pancakes mixture into pan (approx. ¼ cup per pancake).
Cook until golden brown, flipping each pancake halfway.
Optional Toppings
Top with additional sprinkle of fresh berries, cinnamon and/or vegan dairy free whipped cream.
Notes
*To Make Oat Flour: Take regular oats or quick oats (the ones you use for oatmeal) and add them to your food processor. Blend them until they reach the consistency of a fine powder.Boxed Pancake Mix Option: You can use your favorite boxed oatmeal pancake mix instead of making your pancakes from scratch. For vegan and dairy free modifications, substitute almond milk, flax egg and oil/vegan butter.Gluten Free: While oats and oat flour are generally gluten free, there can often be cross contamination at the packaging facility with products that contain gluten. It is best to buy a brand specifically designated as gluten free.Other Non-Dairy Milk Options: Soy milk, coconut milk, pea milk or oat milk.Flax Egg: To make a flax egg, mix one tablespoon of flaxseed meal with three tablespoons of water.
