Herb Garlic Roasted Beets

These beets are coated in an easy herb, garlic oil and roasted to perfection. This recipe is
quick, easy and versatile. Great as a side or on a salad.

Ingredients

  • 2 large Purple Beets
  • 2 large Yellow Beets
  • 3 cloves Garlic
  • 1 tablespoon Italian Seasoning
  • 2 tablespoon Extra Virgin Olive Oil
  • ½ teaspoon Salt
  • ½ teaspoon Pepper

Instructions

  • Slice the ends off both sides of the beets. Peel with a vegetable peeler or knife.
  • Slice beets into ½ to ¾ inch uniform pieces.
  • Mix Italian seasoning and extra virgin olive oil. You can hand mince your garlic or use a
    garlic press. Mix minced or pressed garlic into to oil mixture.
  • Pour oil mixture over beets and mix thoroughly with beets so they are evenly coated.
  • Pre-heat oven on 350 degrees. Bake for 25-30 minutes.
