Slice the ends off both sides of the beets. Peel with a vegetable peeler or knife.
Slice beets into ½ to ¾ inch uniform pieces.
Mix Italian seasoning and extra virgin olive oil. You can hand mince your garlic or use a garlic press. Mix minced or pressed garlic into to oil mixture.
Pour oil mixture over beets and mix thoroughly with beets so they are evenly coated.
Pre-heat oven on 350 degrees. Bake for 25-30 minutes.
