    Herb-Garlic-Roasted Beets

    Herb Garlic Roasted Beets

    These beets are coated in an easy herb, garlic oil and roasted to perfection. This recipe is quick, easy and versatile. Great as a side or on a salad. I recommend finishing with a sprinkle of my delicious Homemade Rosemary Salt! And for a delicious side to go with your beets, check out these cream and delicious Whole30 Mashed Potatoes.

    Peeling Beets

    Slice the ends off both sides of the beets. Peel with a vegetable peeler or knife.

    Slicing Beets

    Slice beets into ½ to ¾ inch uniform pieces.

    Herb & Garlic Oil Preparation

    Mix Italian seasoning and extra virgin olive oil. You can hand mince your garlic or use a garlic press.

    I love my garlic press! Truth be told – I am not a very good knifes-woman. Thus, instead of mincing my garlic by hand. I always go for the press. Makes life easy!     Mix minced or pressed garlic into to oil mixture.

    Coating Beets & Baking

    Pour oil mixture over beets and mix thoroughly with beets so they are evenly coated. I like to use my hands!

    Pre-heat oven on 350 degrees. Bake for 25-30 minutes. My cook time was 25 minutes but ovens can vary so better to err on the side of less and you can always throw it in for longer.

    • 3 cloves Garlic
    • 1 tablespoon Italian Seasoning

    • ½ teaspoon Salt
    • ½ teaspoon Pepper
