Ingredients

  • 4 6 oz Salmon filets
  • 2 Roma tomatoes
  • 1 Small Onion Or ½ large onion
  • 1 Tsp True Lemon Powder
  • ¼ Cup Extra Virgin Olive Oil
  • 1 Lemon Sliced into thin round slices (optional)
  • 2 tablespoon Chopped parsley for garnish Optional
  • 0.5 teaspoon Salt
  • 1 teaspoon Pepper

Instructions

  • Place salmon filets in 9 x 13 baking dish or cast iron skillet.
  • Drizzle with ⅓ of the olive oil. Season with salt, pepper and lemon powder (⅓ of the portion).
  • Place tomatoes evenly over salmon.
  • Drizzle with ⅓ of the olive oil. Season with salt, pepper and lemon powder (⅓ of the portion).
  • Place onions evenly over tomato.
  • Drizzle with ⅓ of the olive oil. Season with salt, pepper and lemon powder (⅓ of the portion).
  • Optional: Place lemon slices evenly over onion.
  • Bake on 350 degrees for 20-30 minutes. Cook time will vary based on thickness of fish.
  • Garnish with fresh parsley (optional).
