    This easy baked salmon is rich and buttery with lemon, fresh tomatoes and onions making this the perfect oven baked salmon recipe for your family dinner or date night!

    My Secret Weapon for Flavor

    You will start by preheating your over to 350 degrees. Slice your tomato in thin round slices to lay on the salmon. Slice the onion in in half and then slice into thin layers and half those again. They should be thin strips.

    You will want to drizzle olive oil and season every layer with extra virgin olive oil, salt, pepper and True Lemon Powder.

    Now let me talk about my secret weapon! TRUE LEMON POWDER.

    I am not even joking. I live by this stuff. If you don’t want to deal with buying lemons or squeezing lemons – ie: saving time and money – this is one ingredient you want to have on hand. I do sometimes use fresh lemons but, in all honesty, this is just a great time saver for me and tastes just like the real thing. I even put it in my tea!

    Ok….back to the recipe!!!!

    Season Every Layer

    Start by placing the salmon filets in 9 x 13 baking dish.

    Drizzle with ⅓ of the olive oil. Season with salt, pepper and lemon powder (⅓ of the portion).

    I like to sprinkle it with my fingers for even distribution.

    Place tomatoes evenly over salmon. REPEAT: Drizzle with ⅓ of the olive oil. Season with salt, pepper and lemon powder (⅓ of the portion).

    Place onions evenly over tomato. REPEAT: Drizzle with ⅓ of the olive oil. Season with salt, pepper and lemon powder (⅓ of the portion).

    For an extra layer of gorgeous (because we also eat with our eyes!)….you can add some thinly slices lemons on top.

    Bake on 350 degrees for 20-30 minutes. Cook time will vary based on thickness of fish and your oven. Garnish with fresh parsley (optional).

    Other Salmon Preparations

    Cooking Tips and Other Seasoning Ideas

    Cook Time: Salmon tends to be a very forgiving fish due it’s fat content, making it rich, buttery and less likely to dry out. However, if you are looking to get the perfect cook on your salmon, using a meat thermometer is best so you can measure the internal temperature.

    Depending on how thick your fish is, the cook time will vary. The USDA recommends an internal temperature of about 145 degrees Fahrenheit for Salmon. You will want to measure from the thickest part of the filet.

    However, you will typically want to pull at about 135 or 140 as the carryover cooking will often bring you up to 145. The fish should be opaque and flake when cut with a fork.

    Skin on or off: This is often personal preference. However, skin on will keep the bottom of the fish from drying out, especially if you cook it on the grill. Who doesn’t like an extra insurance policy for their food!?

    Personally, I also like to buy skin on because, depending on my salmon preparation, I will cook the skin separately into a delicious crispy snack which I affectionately refer to as a seafood potato chip.

    Seasonings for Salmon: Salmon is a very sturdy fish that can stand up to strong seasonings and also tastes delicious on its own.

    Some delicious seasonings for salmon include nori furikake seasoning, onion powder, garlic powder, italian seasoning, cayenne pepper, lemon pepper, herbs such as dill, Louisiana Cajun seasoning, Mediterranean spices and my secret weapon – lemon powder.

    The simple definition of sustainable seafood is seafood that is wild caught or farmed in a responsible way which protects the long term health of the species, the health of the environment, ocean ecosystem and the fisherman and communities that consume the product.
     
    There are a lot of buzz words in the seafood industry that can make things difficult to understand and even harder to buy seafood online.
     
    Many current fishing methods can be harmful to the environment and threaten the long term viability of the fish species they are targeting. Additionally, many fishing methods are largely unmonitored which can create safety issues for the fish and the humans consuming them.     • 2 Roma tomatoes
    • 1 Small Onion Or ½ large onion
    • 1 Tsp True Lemon Powder
    • ¼ Cup Extra Virgin Olive Oil
    • 1 Lemon Sliced into thin round slices (optional)
    • 2 tablespoon Chopped parsley for garnish Optional
    • 0.5 teaspoon Salt
    • 1 teaspoon Pepper

    Instructions

    • Place salmon filets in 9 x 13 baking dish or cast iron skillet.

      I am salmon obsessed and this recipe was simply amazing!! Very simple and really flavorful! And I hopped on board with the True Lemon 🍋….I always have organic lemon juice on hand but True Lemon will be a simple alternative. Thank you Aubrey!!
