How to make the perfect marbled brownie blondies
Brownie Blondies Preparation Steps
- Preheat oven 350°F
- Line 8 inch (8×8) baking pan with parchment paper. See notes for tips on helping parchment paper to stay flat.
Blondie Batter
In a large bowl, with hand mixer, combine melted butter, brown sugar, white sugar, eggs and vanilla. Beat until fully combined.
Add flour to bowl of ingredients. On lowest speed, mix in flour until fully combined.
Hand mix in white chocolate chips.
Set bowl aside and prepare brownie mix in separate bowl.
Brownie Batter
In a large bowl, with hand mixer, combine melted butter, white sugar, eggs and vanilla. Beat until fully combined.
Add flour and cocoa powder. On lowest speed, mix in flour and cocoa powder until fully combined.
You will likely need to scrape the sides with a spatula to combine any cocoa and flour on the sides of the bowl.
Hand mix in chocolate chips or chocolate chunks.
Mixing and Cooking Brownie Blondies
Using cookie scoop or tablespoon, alternate spooning in scoops of blondie batter and brownie batter in an alternating pattern into the baking pan.
You want a contrast between the location of the different colored batters. The batter is thick so they will hold their shape somewhat.
Once all your batter is in the pan, using a spoon, lightly flatten out your brownie blondies so that the surface is level.
Cook brownie blondies on 350°F for approximately 40-45 minutes or until full cooked. Remove from oven and allow to fully cool in baking pan.
Remove brownie blondies from baking pan, slice and enjoy!
Baking Tips
Tip to Measure Flour: When you measure your flour, do not scoop it out directly as that can lead to using more flour than is needed.
To correctly measure your flour, give the flour a stir with a fork or a whisk to loosen it.
Spoon the flour into cup until it is heaping, then level with the flat side of a knife.
Parchment Paper: Rub a little bit of oil on the bottom of your baking pan and place parchment paper on top.
This will help the parchment paper to stick flat. Use can also use clips to hold sides of parchment paper until you pour batter in to weight down.
Slicing Tips: Once brownie blondies have cooled to room temperature, remove from pan (leave on parchment paper) and wrap them tightly.
Place brownie blondies in the refrigerator or freezer to get cold. This will allow for a cleaner slice.
What’s the difference between a brownie and a blondie?
The key factor that sets brownies and blondies apart is the chocolate (usually cocoa powder). Sometimes blondies are mistakenly referred to as “brownie blondies” because they are like a brownie, only blonde!
So when you think about blondies, think of the ooey gooey decadence of a brownie, without the chocolate.
Blondies have a beautiful vanilla-caramel, almost maple like flavor. Brownie blondies combine the best of both worlds.
What is a blondie brownie made of?
Blonde and brown brownies are a combination of brownies and blondies, typically combined in either a layer or in a marbled pattern.
Ingredients such as eggs, flour, sugar, vanilla and butter are generally used in both a blondie and a brownie recipe but you must omit cocoa powder from the blondie portion.
A combination of white and brown sugar is used in the blondies. Versus, brownies which just use white sugar.
White chocolate chips can be used in the blondie batter and regular chocolate chips in the brownie batter.
How is a blondie different from a cookie?
Blondies are classified as cookie bars. And although cookie bars and cookies might sound almost alike, they are actually different.
Cookies are typically circular-shaped sweet snacks that often have a firmer texture than brownies and blondies.
And cookie bars—in this case, our hybrid brown and blond brownies—are rectangular or square-shaped dessert bars that are chewier and softer than most cookies.
How to properly measure your flour?
The best and most accurate way to measure flour is by using a kitchen scale. I have used this kitchen scale for many years and highly recommend it!
To measure, place your bowl on the scale, zero the tare and pour the flour into the bowl.
This also works well to measure other dry ingredients when cooking or baking.
If you don’t have a kitchen scale, the next best thing is to use a measuring cup and the fluffing method.
Fluff the flour with a spoon and sprinkle it into the measuring cup before using a knife to level it off or shake gently.
How to combine the blondie and brownie batter to achieve a marble brownie blondie look?
The key to achieving a marbled look it to use a cookie scoop or tablespoon and add your brownie batter and blondie batter in an alternating pattern.
Contrast in the color patterns is key. You can lightly flatten your brownie blondies once all batter is in baking pan, but don’t mix! The batter will properly spread together when cooking.
FAQ and expert tips
The blondie portion of a brownie blondie does not have chocolate but the brownie portion does. To make up for the lack of cocoa powder, the blond brownies recipe uses vanilla extract, brown sugar and white chocolate chips in the blondie portion.
Blondies, like brownies, freeze very well after baking. The texture will soften as it thaws but this won’t affect the taste.
Brownie blondie bars can last up to a week when properly stored and refridgerator. Wrap each blondie bar in plastic wrap and place them in a re-sealable bag in your fridge for best storage.

These brownie blondies are great. They’re fairly simple, and they bake well. The brownies are very moist and chewy. I did have some trouble removing these from the pan, as they were falling apart, but I think that was my fault for not letting them cool enough. This is a great recipe, my whole family loved it. Will definitely make these again!
Shayna
I have now made this brownie blondie recipe three times. My family absolutely loves them. The marbling is perfect and they are so delicious. Thank you!

These brownie blondies are AMAZING! I have made a few different recipes for blondie brownies but they all seemed to turn to mush and I did not get the pretty marble effect. Not only did these turn our beautiful but they were some of the best dessert bars I have ever made… and I am obsessed with baking. Thank you!!!
