Why this recipe works
- Fall comfort food recipes are the best! In addition to spice cake muffins with pumpkin, these Fall desserts are two of my favorites if you are looking for other fun ideas: Soft Gingerbread Cookies and Skillet Apple Crisp.
- 3 ingredients! Who doesn’t like easy! Grab your spiced cake mix, can of pumpkin puree and throw some chocolate chips in the air and you are on your way!
- These 3 ingredient pumpkin muffins taste just like homemade. Nobody needs to know! You can also modify them to mini pumpkin muffins, 2 ingredient pumpkin muffins if you aren’t down with chocolate chips (but we will probably need to have a chat about that) or pumpkin muffins with yellow cake mix (add some pumpkin spice!).
Ingredients
- Spiced Cake Mix: Duncan Hines, Betty Crocker, Pillsbury or box spice cake mix of choice.
- Pumpkin Puree: Be sure to grab a can of unsweetened pumpkin puree. Be sure not to confuse this with canned pumpkin pie mix. That will make your recipe way too sweet. Libby’s 100% Pure Pumpkin, Market Pantry (Target Brand) and Trader Joe’s both have good pumpkin puree options.
- Chocolate Chips: You can use milk chocolate, semi-sweet or butterscotch for your chocolate chip pumpkin muffins. Sometimes you can even find pumpkin spice chocolate chips during the holidays.
- Milk or Water (Optional but recommended): Milk or water is optional. I find that it makes a slightly fluffier muffin vs. a more dense pumpkin muffin. You can also use apple sauce. Also, different boxed spice cake mix amounts can vary slightly so a little more liquid may be helpful. Whole milk, 2% milk, fat free milk. Soy milk, almond milk, coconut milk, pea milk or oat milk.
