    Healthy blondies are super easy to make using one secret ingredient, chickpeas!

    These vegan blondies made the perfect dessert and, dare I say, breakfast! They are also lovely as hoiday day desserts during Thanksgiving, Christmas, New Year or any time of the year!

    Chickpea blondies can also be modfied to make vegan blondie brownies, vegan white chocolate blondies, vegan matcha blondies, vegan jammie dodger blondie, vegan protein blondies, vegan tahini blondies, vegan almond butter blondies and more!

    This eggless blondie recipe uses almond flour and no need for a flax egg or all purpose flour.

    Ingredients for Vegan Blondies

    Chickpeas: 1 can drained and rinsed.

    Nut Butter of Choice: Be sure to use all natural, no sugar added. Peanut butter, cashew butter and almond butter are all great choices. You can also make your own nut butter! Check out my Brazil Nut Butter and Pumpkin Seed Butter.

    Maple Syrup

    Vanilla Extract

    Almond Flour: You can also use oat flour.

    Baking Soda

    Baking Powder

    Cinnamon

    Sea Salt

    Vegan Chocolate Chips: You can use milk chocolate, semi-sweet or dark chocolate. I prefer semi-sweet or dark. You can also use mini or regular size chocolate chips. If you use mini, I recommend using slightly less (closer to ⅓ cup). Add them to your taste preferences.

    Making batter for blondies

    • Preheat oven to 350F.
    • In food processor, combine chickpeas, nut butter, maple syrup and vanilla extract. Combine until smooth. Scrape sides of food processor.
    • Add almond flour, sea salt, baking soda, baking powder and cinnamon to the food processor. Combine until smooth. Scrape sides of food processor.

    Baking the blondies

    • Set aside 1-2 tablespoons of vegan chocolate chips.
    • STIR larger portion of vegan chocolate chips into your chickpea batter. Do not blend chocolate chips in food processor.
    • Line 8 x 8 baking pan with oven-safe wax or parchment paper.
    • Grease parchment paper or spray with pan spray.
    • Spoon chickpea batter into baking pan. Top with remaining vegan chocolate chips.
    • Bake for 22-25 minutes.
    • Allow to cool for 5-10 minutes. Remove blondies by gently holding side of parchment paper to remove. Cut blondies into slices and enjoy!

    Vegan Blondie Variations

    Vegan Peanut Butter Blondies: Substitute peanut butter chocolate chips for regular. Use peanut butter for but butter of choice.

    Vegan Blondie Brownies: Mix this recipe with vegan brownie recipe to create swirls.

    Vegan White Chocolate Blondies: Substitute White chocolate chips.

    Are blondies vegan?

    Blondies are not typically vegan because most recipes include ingredients such as eggs or butter.

    Can you taste the chickpeas in chickpea blondies?

    No! You cannot taste the chickpeas in this vegan blondies recipe. Chickpeas are an amazingly versatile ingredient than can be used in many different vegan baking recipes.

    Can you eat this chickpea batter raw?

    Yes! These vegan blondies do not use raw eggs or dairy so it is completely safe to be eaten raw. However, be sure to double check your almond flour to make sure it can be eaten raw, as some flours need to be pre-cooked to be on the safe side.

    Equipment

    • Food Processor or Blender, 8 x 8 baking pan, wax/parchment paper (optional)

    Ingredients

    • 15.5 oz chickpeas (drained and rinsed) typical 1 can size
    • ½ cup nut butter of choice (peanut butter, almond butter or cashew butter) use all natural, no sugar added
    • ⅓ cup maple syrup
    • 2 teaspoon vanilla extract
    • ¼ cup almond flour
    • ¼ teaspoon baking powder
    • ¼ teaspoon baking soda
    • 1 teaspoon cinnamon
    • ¼ teaspoon sea salt
    • ½ cup vegan chocolate chips (milk chocolate, semi-sweet or dark chocolate) mini or regular size chips

    Instructions

    • Preheat oven to 350F.

    Notes

    (1) Nut Butter: I recommend all natural, no sugar added. If you are using a sweetened version, you will want to reduce the amount of the maple syrup. Peanut butter, cashew butter and almond butter are all good choices for this recipe.
    (2) Almond Flour Substitute: You can also substitute oat flour.
    (3) Vegan Chocolate Chips: If you use mini chocolate chips, you may want to use slightly less than ½ cup (closer to ⅓ cup). Add them to your taste preferences.
    (4) Wax or Parchment Paper: If you don’t have wax or parchment paper on hand, that is fine. Grease the bottom of your baking pan well. The parchment paper is helpful to take the bars out and get a clean slice. It will just be a bit messier without the parchment paper but they will still turn out delicious.

      I was looking for a gluten free brownie recipe. I added about a tablespoon and a half of Cocoa to the mix and we were really happy with the results. Served the brownies warm with a bit of halo top ice cream for a decadent treat!

      I wanted to make vegan blondies for my best friend who wants to try the vegan lifestyle. This recipe was amazing! I love the addition of chickpeas for the extra protein. My friend is totally converted now. Haha!
