Lobster Fried Rice

Lobster fried rice is an easy and delicious recipe that your whole family will love. Ready in less than 30 minutes and still delicious as leftovers!

  • Pre-cook your rice via method of choice. See Instant Pot Rice (omit rice vinegar from this recipe).
  • Preheat the sauté pan to medium-high heat.
  • Add vegetable oil to pan and spread to coat.
  • For all of your ingredients, mix them every minute or so through the cooking process.
  • Add onions and carrots, cook for 2-3 minutes, or until almost fully cooked. Note: for diced carrots, add at same time as onions. For bagged pre-shredded carrots, add about halfway through onions cooking.
  • Add frozen peas to onions and carrots and mix. Cook for 1-2 minutes until peas are thawed and onions/carrots are fully cooked. Set mixture aside in large bowl.
  • To sauté pan, add additional oil to coat pan and eggs. Cook for 2-3 minutes or until fully cooked (scrambled). Add cooked eggs to mixture in large bowl.
  • To sauté pan, add additional oil to coat pan and lobster tail chunks. Cook for 2-4 minutes or until fully cooked (FDA recommends cooking to internal temperature of 145°F). Add cooked lobster to mixture in large bowl.
  • Mix until all ingredients in large bowl are well combined.
  • Add soy sauce and sesame oil and mix thoroughly.
  • If you enjoy spicy, add fermented black bean sauce (highly recommend!) and chili oil or chili crunch and mix thoroughly.
  • Add cooked rice and mix thoroughly. Add additional soy sauce, sesame oil and chili crunch as necessary to suit your tastes and spice level.
  • Transfer to serving dish and enjoy!

Notes

Serve with a side of Chili Crisp, Hibachi Ginger Sauce or Hibachi Mustard Sauce.
