    Why This Recipe Works

    • This sweet and savory honey butter is delicious on so many baked goods including bread, biscuits, croissants and scones.
    • Raw Manuka honey is believed to be the healthiest honey!
    • This recipe is so easy it will take you less than 5 minutes to make.

    Benefits of Manuka honey

Manuka honey (pronounced – Mah-noo-Kah) is generally believed to be one of the healthiest types of honey available. It is derived from the nectar of the Manuka bush, a plant native to New Zealand.

Manuka is considered a health food and is also believed to have medicinal and antibacterial properties and is used for wide ranging applications such as antiseptic for topical cuts or wounds, burns, throat lozenges or to help the commons cold. It is also believed to be help resolve acne and is used in general skin care and body care products such as moisturizer or Manuka body butter.

Health benefits aside, can we please talk about how this honey is just plain DELICIOUS! I enjoyed the subtle notes of floral and citrus with a light nutty taste and smooth sweetness. Perfect for my whipped butter with cinnamon.

    Where to buy Manuka honey

You can purchase this honey online and at many health food stores including Sprouts and Whole Foods. Some reputable New Zealand Manuka brands include Comvita and Kiva. Comvita offers different UMF levels on Amazon such as Manuka Honey UMF 10+ or Manuka Honey UMF 20+.

When purchasing this unique honey you want to be sure that you are getting the real thing as it carries a heavy price tag. While not an exclusive list, you will want to make sure your product is produced and packaged in New Zealand. New Zealand has very strict testing standards which includes testing for DNA markers unique to the Manuka bush. Only then can it be labeled as “Tested Certified Manuka” on the jar. There are many other factors such as MGO and UMF quality ratings and tracing from hive to home. The New Zealand Ministry for Primary Industries is an essential resource for sourcing and researching quality standards.

Can I make this recipe with regular honey?

Absolutely! Regular honey will still provide a sweet component that is needed for this recipe.

Regular honey is different from raw honey and Manuka honey because it has been pasteurized or filtered. It will generally be more translucent or clear in color with a more syrupy consistency. Raw and Manuka honey will be darker in color and thicker in consistency and will retain more vitamins and natural enzymes that would be removed from the pasteurization process. However, regular honey will still be delicious.

What is the difference between whipped honey butter and non-whipped?

Whipped honey butter is whipped vigorously with a hand blender which aerates the butter giving it a much lighter and fluffier consistency than regular honey butter. It is excellent as a light spread for baked goods including bread, biscuits, croissants and scones.

Should I use room temperature butter?

Yes, you should put your butter out on the counter about one hour ahead of time. Room temperature butter is best for aeration, meaning whipping air into the butter. It makes it much easier to whip the butter and it will take less time to get it light and fluffy.

Additionally, if you decide to use this butter as an ingredient in other baked goods, the room temperature butter will hold the trapped air which will expand when cooked producing a fluffier baked good.
