Boxed Pancake Mix Batter
Prepare according to box instructions.
Homemade Pancake Batter
In large bowl, combine flour, sugar, baking powder, baking soda and salt.
Add milk, butter, vanilla and egg. Mix until smooth (a few lumps is fine).
Batter should be thick and creamy. If batter is too thick, add additional milk 1 tablespoon at a time until desired consistency is reached.
Blackstone Pancakes on Griddle
Preheat Blackstone griddle flat top to medium heat.
Generously oil Blackstone griddle. Use oil squeeze bottle or Blackstone spatula to spread.
Using Blackstone pancake dispenser or measuring cup, pour ¼ to⅓ cup batter for each pancake onto the Blackstone griddle.
Cook for approximately 1-2 minutes. You will see bubbles on top and bottom edges are looking cooked.
Flip pancakes with spatula and finish cooking until golden brown (approximately another 1-2 minutes). Do not press down on pancakes if you want them to be fluffy.
