I have a confession. I LOVE hearts of palm. I have loved them for as long as I can remember. Hearts of palm are low carb, keto friendly, high in fiber, low calorie, healthy and delicious!
When I say hearts of palm are the best, I mean open up a can and eat them as a snack in my car. Yes, I am that weirdo.
The texture of hearts of palm is somewhat similar to an artichoke only firmer. They are a cylindrical shape and typically in a can sitting in a salt brine.
You can buy them at most grocery stores (near the artichokes), Walmart and Trader Joe’s.
Now, for this Palmini lasagna recipe! Palmini is a brand that produces hearts of palm in different shapes. For the Palimini lasagna noodles, they are sliced in wide thin strips so they mimic lasagna noodles.
It is important to note that the texture of hearts of palm noodles is not the same texture as pasta. They are more firm vegetable texture versus a soft and chewy pasta.
Hearts of palm also does not contain the starch that pasta does, so your lasagna will have more moisture than a typical lasagna.
All that being said, I’m not sure there is an exact replica of pasta in taste and texture, but it you are on a low carb or keto diet or just looking for a lower calorie version of a delicious lasagna, you will love this hearts of palm lasagna!

Palmini Lasagna Ingredients
Palmini Lasagna Noodles: Palmini lasagna noodles (hearts of palm) can be purchased online in a can or bag. They are around 12-14oz per container and 8 oz drained weight.
They can also be purchased at most grocery stores. Another good brand that I have used for this hearts of palm lasagna is Palmsticcio gluten free keto lasagna noodles.
Pasta Sauce or Marinara Sauce: You can use any type of pasta or marinara sauce for this recipe. A thicker sauce is recommended as the hearts of palm contain more moisture than regular pasta noodles.
If you are making this keto or low carb, be sure to check the sugar/carb content on your sauce, as many pasta sauces will add unnecessary sugars.
Ricotta Cheese: Whole milk or low fat ricotta work for this recipe.
Mozzarella Cheese: Whole milk or low fat shredded mozzarella cheese.
Parmesan Cheese: Shredded parmesan or pecorino Romano are great for this recipe.
Salt and Freshly Ground Black Pepper: To your taste.
Chopped Fresh Parsley and/or Basil (Optional): You can also use a sprinkle of Italian seasoning if you don’t have fresh herbs.
Hearts of Palm Keto Lasagna Instructions
- Preheat oven to 400°F.
- Divide all ingredients into 3 parts. You will add a layer of each ingredient 3x.
- In 9 x 13 inch baking dish, add a layer of pasta or marinara sauce.
- Add a layer of Palmini lasagna noodles.
- Add a layer of ricotta cheese.
- Add a layer of parmesan cheese.
- Add a layer of mozzarella cheese.
- Add a sprinkle of salt and pepper.
- Repeat 2nd layer in the same order: Pasta or Marinara Sauce, Palmini lasagna noodles, ricotta cheese, parmesan cheese, mozzarella cheese, salt and pepper.
- Repeat 3rd layer in the same order and add optional freshly chopped parsley and basil on top (mixed with mozzarella cheese).
- Bake for approximately 20 minutes or until warmed throughout and cheese is fully melted.
- Note: Check around 15 minutes and if cheese is getting too dark, you can lightly cover with a piece of aluminum foil for the remaining cook time.
This Palmini lasagna recipe uses Palmini lasagna noodles. If you don’t have access to these noodles, you can make hearts of palm keto lasagna using thinly sliced hearts of palm.
Palmsticcio Gluten Free Keto Lasagna Noodles also work well.

I actually made this a couple days before I read your post. G, it wouldโve been great to see how you lined up the noodles. Because I did overlapping and ended up using one and a half packs!
I have to be dairy free, so mine is Made with tofu instead of ricotta cheese. Still, it is really really delicious.

LOVE this recipe. I add about 1-1/2 pounds lean ground beef or turkey or a combo to the marinara sauce (Yo Mama’s Marinara works really well for this). I also like to add an egg to the ricotta as well as some fresh basil and parsley because mixing in the egg makes the ricotta much easier to spread. If I use a 9×13 pan, I need two bags of palmini lasagna in order to get 3 full layers. Of course these adds mean you need to adjust the nutritional info! Otherwise I make it just like this, but I do always bake it longer and I also boil the rinsed palmini for about 5 minutes before putting the lasagna together!
