    This Jackfruit and Sweet Potato Curry Recipe is rich, hearty and super easy to make. This healthy one pot meal is vegan, oil free and wonderful to feed your whole family.

    What is jackfruit?

    Jackfruit is a fruit found in India and Southeast Asian countries and has been all the rage lately as an amazing meat substitute used often in vegan and vegetarian cooking. It lends itself well to curries and can be shredded and serves as BBQ pulled “pork”.

    What does jackfruit taste like?

    Jackfruit has a very mild flavor. I liken it to the texture of an artichoke heart but a bit firmer and meatier.

    What jackfruit to buy

    It is typically purchased in a can at grocery stores and is stored in brine or syrup. For this recipe, make sure to purchase the jackfruit in brine.

    Who sells jackfruit

    Whole foods or Traders Joe’s typically carry jackfruit (I use Trader Joe’s brand). You can also purchase online here.

    Which curry is best? Which curry is hottest?

    For this recipe, I use panang curry. However, this recipe would work well with masaman or yellow curry as well. Below is a general description of the most popular types or curries and which is the hottest.

    • Green Curry: Blend of green chilies, lemongrass, shallots, coriander root, white pepper, garlic, kaffir lime, shrimp paste (sometimes) and salt. Known to be one of the hottest.
    • Red Curry: Blend of dried red chilies, cilantro, coriander, garlic, shallots, cumin, kaffir lime, white peppercorn, lemongrass, shrimp paste (sometimes), galangal and salt. Also known to be one of the hottest.
    • Yellow Curry: Blend of turmeric, coriander, curry cumin, lemongrass, galangal, shrimp paste (sometimes), dried red chilies, salt, ginger, garlic and shallots.
    • Panang Curry: Blend of red chilies, shallots, garlic, galangal, lemongrass, kaffir lime rind, coriander root, white pepper, salt and shrimp paste (sometimes).
    • Masaman Curry: Blend of red chilies, cloves, white pepper, shallots, garlic, galangal, lemongrass, shrimp paste (sometimes), coriander, cumin, and salt.

    Ingredients

    • sweet potatoes
    • jackfruit: in brine, not sweet syrup.
    • red bell pepper
    • shredded carrot
    • sweet onion
    • coconut milk (full fat)
    • vegetable stock
    • panang curry paste (My favorite brand has a small amount of sugar. Variety pack of curry here.
    • basil (optional)

    How to make this recipe                                               

    • In large soup pot, combine all ingredients and bring to a boil.
    • Reduce heat to medium/high and simmer for 10-13 minutes or until sweet potatoes are soft. Stir every minute or so.

    • Can used reduced fat coconut milk if looking to reduce calories.
    • Vegan: Use curry paste brand with no sugar.
    • This recipe could easily work with a masaman or yellow curry as well.

    Equipment

    • Soup pot

    Ingredients

    • 2 large sweet potatoes (cut into 1 inch cubes)
    • 20 oz can jackfruit (in brine, not syrup) (drain and cut into 1 inch cubes) Trader Joe's Brand Recommended


    • 1 red pepper (slice into thin strips)
    • ½ cup shredded carrot Buy shredded carrot in bag. Or, chop.
    • ½ sweet onion (chopped)
    • 13.5 oz can coconut milk (full fat) Reduced fat will work too
    • 1 cup vegetable stock Non-vegetarian – chicken stock works well
    • 4 oz can panang curry paste Maesri Brand Recommended
    • 4 leaves basil (garnish) Optional

    Instructions

    • In large soup pot, combine all ingredients and bring to a boil.

      Recently I have heard a lot about the health benefits of jackfruit, so being an adventurous vegetarian I picked up a can at my local Trader Joe’s. Now, how do I eat this stuff? After doing a Google search I found an interesting looking jackfruit and curry recipe at Aubrey’s Kitchen. I love anything curry, so I gave it a whirl. It was wonderful.
