    Veggie Turkey Chili

    This healthy turkey chili is jam packed with super delicious vegetables and so much flavor. The best part is – it is so flexible. Use your veggies on hand. Mix up the meat. It is SO good. Great beginner recipe.

    Why This Recipe Works

    How do you make turkey chili from scratch?

    Turkey chili and chili in general is so easy to make from scratch! It is such a forgiving dish because you can play with meat, veggie and spice combinations and somehow it always turns out tasting magical!

    Personally, when you ask me what makes the best chili, I have to say there are three core spices:

    • Cumin
    • Chili Powder
    • Cocoa Powder

    The best chili is made from the ingredients you love and the right amount of delicious spices. I encourage you to taste as you cook. I am an unabashed crazy spice bold flavor lover. So I usually throw in a pinch more of everything here and there.

    How to make this recipe

    Ingredients

    • 1 lb Ground Turkey 99% or 93% Fat Free – Whatever you prefer
    • 1 large Onion Chopped
    • 2 Bell Peppers Chopped
    • 1 16 oz Bag Carrots Chopped
    • 2 Zucchini Chopped
    • 2 Yellow Squash Chopped
    • 1 Bunch Kale Chopped
    • 2 tbsp Chili Powder Add more or less to your liking
    • 2 tbsp Cumin Add more or less to your liking
    • 1 tbsp Onion Powder Add more or less to your liking
    • 1 tbsp Garlic Powder Add more or less to your liking
    • 1 tsp Salt Add more or less to your liking
    • 1 tsp Pepper Add more or less to your liking
    • 5 cup water
    • 5 tbsp Better Than Bullion (Chicken) Any bullion or your choice. Add more or less to your liking
    • 28 oz Can Diced Tomato
    • 29 oz Can Tomato Sauce
    • 1 tbsp Cocoa Powder Optional. Could also add bar of chocolate.
    • 1 tsp Cayenne Powder Optional

    Instructions

    • Place ground turkey into a skillet and break up with a spatula.
    • Cook ground turkey until lightly browned and fully cooked. Cooking in olive oil or other cooking is optional depending on your calorie desires.
    • Add ground turkey to large pot.
    • Add water, tomato sauce, diced tomatoes and spices. Set to high to start heating to a boil.
    • Chop all veggies to desired size. Add to pot.
    • Once liquid comes to a boil, reduce heat and summer for about 15-20 minutes until your veggies are cooked to your desired softness.
    • You can add more water, bullion or spices to taste.

      Make this! If you’re on the fence about making this chili…just do it, you won’t be sorry. The veggies add so much unique flavor and interest! I make turkey chili often but have never made chili with carrots in it, but I am pretty sure this will be my go to chili from now on! Aubrey Kitchen, you’re a culinarily, creative goddess 😊
