    Ingredients

    • Tomatoes: Petite or regular dices tomatoes. Can include version with diced chilies (such as Rotel) or add diced chili separately.
    • Diced Chilies: Canned diced chilies.
    • Cream Cheese: Regular, low fat, fat free or vegan/plant based cream cheese.
    • Cumin
    • Italian Seasoning
    • Chili Powder
    • Kosher Salt
    • Smoked Paprika
    • Onion Powder
    • Garlic Powder
    • Cheddar Cheese: Shredded. Can also use other cheeses such as Gouda, Monterey Jack, Colby, Havarti, Gruyère and Mexican Cheese Blend.
    • Bacon: Optional
    • Cilantro or Parsley: Freshly chopped for garnish.

    How to make the perfect creamy corn dip

    1. Preheat oven to 350℉.
    2. In a large mixing bowl, beat cream cheese, can of tomatoes, diced green chilies and all seasonings (chili powder, salt cumin, Italian seasoning, chili powder, kosher salt, smoked paprika, onion powder and garlic powder) until smooth.
    3. Hand mix in canned corn.
    4. Transfer to cast iron skillet and bake on 350℉. for 30 minutes.
    5. Add grated cheddar cheese and bake for an additional 5 minutes until cheese is golden and melted.
    6. Garnish with cilantro, chopped parsley or cilantro and crispy bacon.

    • 2 can yellow corn (drained) (15 oz can size)
    • 1 can petite diced tomatoes (drained) (10 oz can size)
    • 1 can diced green chilies, drained (optional) (4 oz can size)
    • 8 oz 1 8 oz cream cheese softened
    • 1 teaspoon cumin
    • 1 teaspoon Italian seasoning
    • ½ teaspoon chili powder
    • ½ teaspoon kosher salt
    • ½ teaspoon smoked paprika
    • ½ teaspoon onion powder
    • ½ teaspoon garlic powder
    • 1 cup shredded cheddar cheese
    • ½ cup crispy cooked bacon (chopped) (optional garnish)
    • ¼ cup fresh cilantro or parsley (finely chopped)

    Instructions
