Ingredients
Hamburger Meat: I recommend ground chuck. 80/20 is best but if you use a leaner hamburger meat (90/10) for your Blackstone smash burgers, be sure to add some extra oil to you griddle before smashing. You can also use 70/30.
Onions: Sweet onions (preferred) or yellow onions, thinly sliced.
Seasonings: You can use any seasoning of choice or a pre-mixed hamburger seasoning. Montreal steak seasoning is also delish!
Cheese: Pre sliced Kraft American cheese works well but you can use any cheese of choice. If you want to get creative, pepper jack, cheddar, Monterey or even brie for some decadence are great.
Hamburger Buns: Any choice of burger buns including white, wheat, sourdough or Hawaiian are delicious.
Lettuce
Tomato
Ketchup
Mustard
Pickles or Relish
How to make smash burgers on Blackstone
- Heat Blackstone griddle to medium-high heat.
- Prepare everything ahead so when you start cooking you are ready. This includes buns, burgers, onions and cheese. A food prep cart is helpful.
- Pre slice burger buns. Can add mayonnaise if desired. Tip: If you are new to the Blackstone, you can toast your burger buns first if you don’t want to do too many things at once.
- Thinly slice onions (shaved, mandolin or thin slice).
- Roll 80/20 burger patties into balls. Don’t over pack your smash burger balls. Each ball should be approximately ⅓ pound (¼ cup overflowing). Do not make them too large.
- Place slices of Kraft American cheese (or other cheese of choice) in easy to grab stack on a plate and set to the side.
- If using onions in your smash burgers, place onions down in separate piles (one for each burger).
- Place smash burgers on each onion pile on Blackstone griddle (directly on griddle if no onions).
- Sprinkle each burger with hamburger seasoning of choice.
- Smash each burger down and hold for about 5-10 seconds (you can use a piece of parchment paper in top of each burger to make smashing easier).
- You can use a Blackstone spatula to smash or a burger smasher.
- Once you smash burgers, add extra hamburger seasoning to burgers if desired.
- Toast bread in separate area (if you don’t pre-toast burger buns). About 30-60 seconds on each side.
- When burgers start to sweat and turn brown at bottom, flip them. Optional: You can add a drizzle of mustard before flipping for some extra tang and crust on the burger.
- Add Kraft American cheese (or cheese of choice) to top of Blackstone smash burgers.
- Optional: squirt a little water on Blackstone around (not on) the burgers to help steam cheese.
- Once burgers are fully cooked, transfer to bun and add any desired toppings such as lettuce, tomato, onion, ketchup or mustard and enjoy!
What are smash burgers?
Smash burgers are thin, crispy patties made by smashing a ball of ground beef onto a hot griddle with a spatula.
This technique creates a thin crust on the outside of the burger while keeping the inside juicy and tender.
The result is a burger that’s packed with flavor and texture.
The exact origin of the smash burger is unknown. However, it may have originated in the United States, likely in the Midwest.
Some sources trace the technique back to 1930’s diners and drive-ins, while others credit it to modern burger chains like Shake Shack and Smashburger, which have popularized the technique in recent years.
Regardless of the origin, the smash burger has become a beloved burger style (in my heart – oops) that is enjoyed by all.
How to season smash burgers
When it comes to making the perfect smash burger, seasoning is key. Seasoning your smash burger not only enhances the flavor but also helps create a crispy crust on the patty.
The right combination of seasonings takes the smash burger over the top and creates a delicious and juicy burger that your taste buds will love. Our favorites include:
- Salt: Say no more.
- Black Pepper: You know this one too.
- Garlic Powder: Garlic powder adds a savory, umami flavor to the smash burger. Hello, garlic girls?
- Onion Powder: Onion powder adds a sweet and savory flavor to the smash burger, similar to caramelized onions (ok maybe not as awesome but, easy).
- Chili Powder: Chili powder adds a bit of heat and smokiness to the smash burger.
- Cumin: Cumin adds a warm and earthy flavor to the smash burger.
- Montreal Steak Seasoning: Montreal steak seasoning is a good all-around burger seasoning which has all the major players.
- Smoked Paprika: If you like smoky flavor, this is a beautiful nuance.
How much meat for smash burgers
The amount of meat needed for smash burgers depends on the size of the patties you want to make. Generally, a ¼ (overflowing) or ⅓ cup of ground beef is a good starting point for a single patty.
Keep in mind that the patties will shrink as they cook, so make them slightly larger than you want the final size to be.
We also recommend ground beef with a higher fat content, such as 80/20 or 85/15 to keep the patty moist and juicy.
FAQ and expert tips
Cook Blackstone smash burgers on medium/high to high heat. Be sure that your Blackstone is hot and smoking before adding your burger to the griddle. This will help you create the perfect caramelized burger crust. Crust is king.
You can make Blackstone smash burgers with out without onions! If you enjoy onions, thinly slice them and place on Blackstone and smash your burger over the onions.
You can add oil to the Blackstone for smash burgers but if you are using 80/20 beef with higher fat content, it is not required. The key to a good smash burger is making sure that your Blackstone is hot before adding the burgers.
