Ingredients
Potatoes: Petite potatoes are best for this recipe. You can use gold/yellow skin, red skin potatoes or fingerling potatoes. If you only have access to russet potatoes, you can cut them small but watch your cook time so the potatoes don’t get mushy.
Oil: You can use any oil of choice. I recommend extra virgin olive oil for a rich flavor.
Seasonings of Choice: This recipe is very flexible so you can use any seasonings you enjoy.
Salt: Kosher or regular salt.

How to cook diced potatoes in air fryer
- Lightly spray air fryer basket with cooking spray.
- Preheat air fryer to 400°F.
- Cut raw potatoes into small cubes (approx. ½ inch).
- In small bowl, mix diced potatoes with olive oil and seasonings of choice until thoroughly coated.
- Place diced potato cubes in fryer basket and spread evenly. Do not overfill basket. Diced potatoes should not overlap.
- Cook for approximately 8-10 minutes on 400°F (shake basket halfway).
- Depending on your air fryer, the size of your fryer basket and amount of diced potato cubes in the basket, you can cook for an additional 1 minutes until you reach your desired level of crispness for your air fryer diced potatoes.
